In the last decade, Peru has become internationally renowned for its ingenious, tasty and widely varying gastronomy. Its star dish is ceviche, a preparation of raw fish marinated in citrus juices, served with aji chili peppers, camote sweet potatoes, cassava and corn… and of course, a variety of secret ingredients. Travelling through the north coast of Peru, Amazonia and Lima, this mouth-watering and highly entertaining documentary explores the historical, culinary, environmental and socio-political aspects of this dish, which has been prepared and eaten in Peru in its ancestral form since pre-Hispanic times. From roadside stands to bustling markets to fine-dining restaurants, along the way we meet everyone from fishermen to small-town cooks to acclaimed chefs, Javier Wong and Gastón Acurio, each with their own take on the delectable experience of ceviche.

El Perú se destaca mundialmente por su cocina, reconocida al mismo nivel que la culinaria francesa o china.  Su principal especialidad: el ceviche, plato de múltiples particularidades determinadas por el entorno donde se prepara.  Recorriendo la costa norte del Perú, la Amazonía y también Lima, esta cinta presenta tanto a renombrados chefs como Javier Wong y Gastón Acurio, así como también a pescadores, historiadores y otros interesantes personajes; todos ellos convierten esta aventura gastronómica en una experiencia de lo más exquisita.

Orlando Arriagada (Curico, Chile, 1965) moved to Montreal in the 1990s and quickly made his mark in the television industry. As director and producer, he has made more than 30 films and series, including Beyond the Miracle (2011) and Miss Inc. (2013). The DNA of Ceviche premiered in the Culinary Cinema section of the 63rd San Sebastián International Film Festival.
